Ingredients:

  • 4 cups fresh or frozen corn kernels
  • 1 onion, diced

  • 2 potatoes, peeled and diced

  • 1/2 cup heavy cream

Instructions:

  1. Cook Vegetables:

  2. Make Roux:

    • Sprinkle flour over the onions and garlic, stirring constantly to create a roux. Cook for 2-3 minutes to eliminate the raw flour taste.
  3. Add Broth:

    • Gradually pour in the vegetable or chicken broth, stirring to avoid lumps. Bring the mixture to a simmer.
  4. Add Potatoes and Corn:

    • Add diced potatoes and corn kernels to the pot. Simmer until the potatoes are tender, about 15-20 minutes.
  5. Blend Soup (Optional):

    • If you prefer a creamier texture, use an immersion blender to partially blend the soup, leaving some chunks of corn and potatoes intact.
  6. Season and Add Thyme:

    • Season the chowder with thyme, salt, and pepper. Adjust the seasoning to your taste.
  7. Add Milk and Heavy Cream:

    • Pour in the milk and heavy cream, stirring to combine. Simmer the chowder for an additional 5-10 minutes, allowing the flavors to meld.
  8. Serve:

    • Ladle the corn chowder into bowls. Garnish with crumbled bacon (if using), chopped green onions, or parsley.
