Borscht Recipe (Beet Soup):

Ingredients:

  • 3 medium beets, peeled and grated
  • 1 large potato, peeled and diced
  • 1 carrot, peeled and grated
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 small cabbage, shredded
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 bay leaf
  • 1 teaspoon sugar
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • 1 tablespoon white vinegar
  • Salt and pepper to taste
  • Sour cream and fresh dill for garnish

Instructions:

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onions and cook until translucent.

  2. Add grated beets, grated carrots, and diced potatoes to the pot. Sauté for about 5 minutes, stirring occasionally.

  3. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

  4. Add shredded cabbage to the pot and cook until it begins to wilt.

  5. Pour in diced tomatoes with their juice, beef or vegetable broth, bay leaf, sugar, tomato paste, white vinegar, salt, and pepper. Stir well to combine.

  6. Bring the borscht to a boil, then reduce the heat to low and let it simmer until all the vegetables are tender, about 30-40 minutes.

  7. Taste the borscht and adjust the seasoning if needed.

  8. Serve the borscht hot, garnished with a dollop of sour cream and chopped fresh dill.
